What a perfect time of the year to be creative in the kitchen! And also the perfect opportunity to invite your kids to participate and make Halloween cakes baking and decorating a family activity. Halloween cakes can be as simple as a pan cake with the right decoration or a more complex recipe using a lot of icing. It depends mostly on the amount of time you have or you are willing to spend on the project.

Let’s start by the simple ideas. If you grab a simple cake and add some orange food coloring and then top with chocolate frosting, you are almost ready. Stick some candy grave stones on top of the cake, and use green piped icing to create a grass-like effect. This will give you a scary Halloween graveyard. It is a simple idea but a good beginning.

Here is one of the simplest recipes for a delicious pumpkin cake with cream cheese frosting. It will take approximately 40 minutes to prepare.

Ingredients

  • 2 cups sugar
  • 4 large eggs
  • 1 cup vegetable oil
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 2 cups all-purpose flour
  • ½ teaspoon groud ginger
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups pumpkin puree or cooked mashed pumpkin
  • Cream cheese frosting
  • ½ cup chopped pecans

Preparation

Let’s prepare the pumpkin cake. Combine in a large clean mixing bowl, sugar, vegetable oil and all the eggs. Mix well until it is fully combined. Sift the dry ingredients into a separate bowl. Add the dry mixture into the oil mixture and beat very well. Finally add the pumpkin puree mixing all.

Pour batter into two greased and floured 9-inch round layer cake pans. Bake it at 350° for 35 to 40 minutes. Turn out to racks to cool. When it is cold, frost pumpkin cake with cream cheese frosting (see instructions below) and sprinkle with chopped pecans.

You can replace the pecans with chocolate chips, or nuts as preferred.

The cream cheese frosting is very easy to do. Here are the instructions:

Combine in a large mixing bowl, ¼ cup butter, 1 package of cream cheese. The cheese must be at room temperature. If it is cold, it will be difficult to mix. Add 1 pound confectioner’s sugar and 2 teaspoons vanilla extract. Beat all the ingredients very well until smooth, and the frosting is ready. The mixture will be enough for a two layer pumpkin cake.
