
Cranberry Christmas Cake Recipe
Why is it that we save cranberries for the holiday season? Everyone raves about how great they are, yet how often is cranberry sauce served other than at Thanksgiving and Christmas dinner? While we are calling this a cranberry Chritsmas Cake, recipes like this should be served year round. It is understandable why people save certain recipes for special occasions, but this one is just too good to keep a secret 364 days out of the year.
Ingredients for cake:
- 3 tablespoons of butter
- 3 cups cranberries
- 1 cup milk
- 1/4 teaspoon of salt
- 1 cup sugar
- 2 cups flour
- 3 teaspoons of baking powder
Preheat the oven to 350 degrees and grease a 9” square baking pan. Combine all ingredients except for cranberries and whisk until thoroughly combined. Once ingredients are well mixed, fold in cranberries until well combined. Pour batter into greased pan and place on middle rack of oven for 35-40 minutes. When cake is done, remove from oven and allow to cool on wire rack before removing from pan.
For icing (do not make until ready to serve the cake):
- 1 cup sugar
- 1 teaspoon vanilla
- 1 teaspoon flour
- 2/3 cup cream or half and half
- 1/2 teaspoon butter
- 1 tablespoon vinegar
In a mixing bowl, combine sugar and flour. Take the remaining ingredients (except for the vanilla) and put in sauce pan to warm. Stir in flour mixture and continue to stir until all ingredients are combined and liquefied. Allow mixture to come to a boil, add vanilla and serve immediately over cake.
This is a truly special Chritsmas Cake Recipe treat that can be had year round for a special desert. We can all but guarantee that this is something that you will rarely see served, if ever, at someone’s home. It is also guaranteed that at least one person will utter, “Why don’t we have this more often?”
